Indian Curries Explained: A Spice Lover's Guide

A traditional Indian menu can feel like a secret language — dozens of curries, each with its own name and spice level. The good news: once you understand a handful of styles, ordering becomes easy and you'll always land on something you love. Here is a plain-English guide, from the gentlest to the boldest.

Mild & creamy

  • Korma — the mildest of all: sweet and rich with cream, coconut and cashew. Perfect for first-timers and children.
  • Tikka Masala — a creamy, lightly spiced masala sauce; comforting and crowd-pleasing.
  • Butter Chicken — tandoor chicken in a buttery tomato-cream sauce, mild and luxurious.

Medium & aromatic

  • Bhuna — chopped onions and fresh tomato reduced into a thick, deeply savoury sauce.
  • Rogan Josh — a fragrant tomato-based curry with warming spices.
  • Jalfrezi — onions, peppers and herbs in a medium-to-hot, punchy sauce.
  • Dhansak — a sweet-and-sour curry with lentils, a Parsi classic.

Hot & fiery

  • Madras — a properly spicy curry built on madras chillies.
  • Vindaloo — very hot, tangy and intense; for serious chilli fans only.
  • Chicken Tikka Naga — glazed with naga chilli paste, one of the hottest on the menu.
